Our last class!
Today was our luncheon. We met at the putt-putt pavilion by the ridges and each group brought a food item that would have applied to the specific population that they were growing the garden for. The items were also supposed to utilize local grown foods such as produce, etc.
Our group made a bean and flax salad as well as a fennel salad with vinaigrette. Other people brought chips and salsa, pasta salad, and Dr. Holben went to the village bakery to get breakfast pizzas and cook (the date bars were delicious!) Many people went to the farmers market to get the items they needed for their dishes. All of the food was yummy and the weather was perfect.
It's weird to think that this is one of my last undergrad classes. Graduation is right around the corner and it's mildly terrifying.
